Lentil Flour Pancakes

• 1 cup Organic High Performance Lentil Flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1 cup buttermilk
• 1 large egg
• 2 tablespoons maple syrup
• 2 tablespoons melted butter
• 1 teaspoon vanilla extract
1. In a bowl, whisk together lentil flour, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together buttermilk, egg, maple syrup, melted butter, and vanilla extract.
3. Combine wet and dry ingredients, stirring until just mixed.
4. Heat a griddle or non-stick pan over medium heat.
5. Pour 1/4 cup portions of batter onto the griddle.
6. Cook until bubbles form on the surface, then flip and cook until golden brown.
7. Serve with your favorite toppings.
