Lentil Flour Savory Crepes


• 1 cup Organic High Performance Lentil Flour
• 1 1/2 cups milk
• 2 large eggs
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• Filling of your choice (e.g., sautéed vegetables, cheese, herbs)
1. In a blender, combine lentil flour, milk, eggs, salt, and pepper. Blend until smooth.
2. Let the batter rest for 30 minutes.
3. Heat a non-stick skillet over medium heat.
4. Pour 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
5. Cook until the edges start to lift, then flip and cook the other side.
6. Repeat with the remaining batter.
7. Fill each crepe with your favorite savory filling.
