Lentil Flour Waffles

• 1 1/2 cups Organic High Performance Lentil Flour
• 1 tablespoon sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1 1/4 cups milk
• 1/3 cup melted coconut oil
• 2 large eggs
• 1 teaspoon vanilla extract
1. Preheat your waffle iron according to the manufacturer’s instructions.
2. In a bowl, whisk together lentil flour, sugar, baking powder, and salt.
3. In another bowl, whisk together milk, melted coconut oil, eggs, and vanilla extract.
4. Add the wet ingredients to the dry ingredients, stirring until just combined.
5. Pour the batter onto the preheated waffle iron and cook until golden brown.
6. Repeat with the remaining batter.
7. Serve with fresh fruit and a drizzle of honey.
