Protein-Packed Chocolate Chip Cookies

  • 1 cup Organic High Performance Lentil Flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips
Instructions: Preheat oven to 350°F (175°C). In a bowl, mix melted coconut oil, maple syrup, and vanilla extract. Add lentil protein flour, baking soda, and salt. Mix until well combined. Fold in dark chocolate chips. Drop rounded tablespoons of dough onto a baking sheet. Bake for 10-12 minutes or until the edges are golden. Cool on a wire rack.
